For a long time bread has been trivialized. It has become a fast product, cheap and expendable. Something that is bought without thinking and forgotten just as quickly.
At Tres Hileras we don't work like that.
We don't sell bread here in the modern sense of the word.. We sell job.
Job is time. Job is repeating a process hundreds of times until you really understand it. Job is knowing when not to accelerate, even if it costs money.
Our bread is not born from an industrial recipe or a generic manual. Born from daily work in the workshop, of accumulated experience, of errors made and corrected. To understand flour, fermentation, rest and the oven as parts of a whole, not as isolated steps.
Behind every piece there are people. A team that knows what it does and why it does it that way. There are no shortcuts. There is no improvisation. There is no “it doesn't matter”.
The result is not only bread that lasts longer or is better digested.. It is a product with consistency. With judgment. with identity.
And so, nowadays, it's not that common.
Tres Hileras does not pretend to please everyone. It aims to be recognizable to those who value a job well done..
Because bread can be many things. But when there is a job behind, it shows.
